Hedgehog, either stewed or fried, is considered a national dish among European gipsies. This unique cuisine has roots in survival—during times of persecution, especially in Poland and the Baltic regions, gipsy families would hide in forests and prepare hedgehog as a nourishing meal. The dish is wrapped in clay and baked in a fire, with the clay removing the spines. It remains a cherished symbol of endurance, resourcefulness, and the ability to find sustenance in the wild.
